Peach Mango Compote

This compote is a favorite of guests and goes great with waffles, pancakes and ice cream.

Makes enough to serve 4

2 Tbs. butter
4 peaches, peeled, pitted and sliced
2 mangoes, peeled and sliced
2 Tbs. brown sugar

Make sure the peaches and mangoes are ripe.Melt butter is a large sauté pan.  Add peaches, mangoes and brown sugar. Simmer until the fruit is soft without being mushy and the liquid is the consistency of a heavy syrup.

Pour over pancakes, waffles, or ice cream.
