1/4 Cup – Brown sugar
3 Tbsp. – Corn Starch
1 1/4 Cup – AP Flour
1 1/2 tsp – Baking powder
1/2 tsp – Salt
1 3/4 tsp – Cinnamon
2 tsp – Ground ginger
1/4 tsp – Ground cloves
1/2 tsp – Nutmeg
2 – Eggs (separated)
1 Cup – Whole Milk
1 Cup – Pumpkin
4 Tbsp. – Melted Butter
Mix dry ingredients together.
In a separate bowl, whisk together pumpkin, egg yolks and milk. Add melted butter.
Whip egg whites to a stiff peak.
Fold Pumpkin mix into dry ingredients until just combined. Don’t overmix. Fold in stiff egg whites.
Bake in a hot iron 2 ½ minutes.

2 Tbsp. – Lemon Juice
4 Tbsp.- Butter
Mix together sugar, cornstarch & cinnamon. Add apple & lemon juice. Simmer until thickened. Swirl in butter.
